Unniappam (Banana Rice flour fritters)

Unniappam (Banana Rice flour fritters)

Soft and tender mildly sweet fritters made with bananas, rice flour and Jaggery. Fried with traditional desi ghee. Makes around 25 fritters

Ingredients:

  • Rice flour- 2 cups
  • Jaggery – 3/4 cup
  • Water – 1/2 cup
  • Banana (yelakki)- 2
  • Coconut pieces -1/4 cup
  • Ghee
  • Ginger powder – 1/8 tsp
  • Cardamom powder – 1/4 tsp

Method:

  • Melt crushed jaggery in water and remove impurities. Let it cool.
  • Toast coconut in ghee to golden brown.

Mash the bananas and keep aside

Combine together rice flour, melted jaggery, mashed banana and required water. The batter should be like idly batter. Let it rest for 1- 2 hours.

Heat a pan with pits (kuliappam pan) and add ghee . Once hot reduce flame to medium to low and fill each hole with batter and cook it covered for 2 to 3 mins.

  • After 2 to 3 mins flip to the other sides and cook till golden brown . Add additional ghee if desired.
  • Delicious unniappam is ready . Enjoy
