Foxtail Millet kheer / Thinai payasam

Foxtail millet is one of the ancient grains and is rich in antioxidants, dietary fiber and protein. Happy healthy cooking and clean eating.

Ingredients:

  • Foxtail millet – 1 cup
  • Moong dal – 1/2 cup
  • Jaggery- 1.5 cup
  • Cardamom powder- 1tsp
  • Thin coconut milk – 1 cup
  • Thick coconut milk – 1 cup
  • Ghee – 1.5 tbsp
  • Cashew – 15
  • Raisins – 15

Preparation:

  • Dry roast foxtail millet on low flame until fragrant.
  • Boil 6 cups of water in a pot. Once water boils add foxtail millet & moong dal and cook till mushy. Takes about 20 min 
  • Meanwhile crush jaggery and melt in little water and remove the impurities.
  • Add Jaggery to the the cooked millet and simmer for few mins.
  • Add thin coconut milk and simmer for couple of mins.
  • Now add thick coconut milk, cardamom powder and simmer for a minute and switch off flame.(do not boil after adding thick coconut milk)
  • toast cashews and raisins in ghee and add to the kheer.
  • Healthy payasam is ready.
