Foxtail millet is one of the ancient grains and is rich in antioxidants, dietary fiber and protein. Happy healthy cooking and clean eating.
Ingredients:
Foxtail millet – 1 cup
Moong dal – 1/2 cup
Jaggery- 1.5 cup
Cardamom powder- 1tsp
Thin coconut milk – 1 cup
Thick coconut milk – 1 cup
Ghee – 1.5 tbsp
Cashew – 15
Raisins – 15
Preparation:
Dry roast foxtail millet on low flame until fragrant.
Boil 6 cups of water in a pot. Once water boils add foxtail millet & moong dal and cook till mushy. Takes about 20 min
Meanwhile crush jaggery and melt in little water and remove the impurities.
Add Jaggery to the the cooked millet and simmer for few mins.
Add thin coconut milk and simmer for couple of mins.
Now add thick coconut milk, cardamom powder and simmer for a minute and switch off flame.(do not boil after adding thick coconut milk)
toast cashews and raisins in ghee and add to the kheer.
Healthy payasam is ready.
